Quinoa is a delicious and nutritious option for those looking to increase their protein and fiber intake. If you’re looking for a great salad, try this Asian inspired recipe!
Ingredients:
1 coleslaw bag (salad aisle)
1/2 bag shredded carrots
1 bag snow peas
1 handful peanuts
Sesame seeds
1 cup or more edamame beans
Red pepper (or any other color) cut length wise
Green onion, chopped
3/4 cup quinoa
Spicy wasabi peas
Dressing –
1/4 cup peanut butter
2 tablespoons minced ginger
1 tablespoon minced garlic
1 tablespoon honey
3 tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 tablespoon sesame oil
Cook the quinoa according to package instructions, let it cool, and then mix with all the other ingredients. Mix dressing ingredients together and toss with quinoa mixture.
