Healthy Beef + Vegetable Soup

Are you ready to make the most delicious comfort soup ever? One filled with vitamins, minerals, fibre and a whole ton of love? You’ll want to try this amazing Beef + Vegetable Soup. (For you vegetarians, just omit the meat!)

OKAY! Here are the ingredients you’re going to need for a big pot that will serve 12:

☐ 1 Flank Steak

☐ 1/8 cup of Lemon Juice

☐ Sea Salt 

☐ 2 tbsp of Worcestershire Sauce

☐ 4 White/Russet Potatoes

☐ 4 Ribs of Celery

☐ 4 Large Carrots

☐ 1 Cooking Onion

☐ 2 Large Sweet Potatoes

☐ 1 Large Turnip

☐ 1-2 handfuls of Fresh Green Beans

☐ 1-2 cups of Frozen Peas

☐ 1-2 cups of Frozen Corn

☐ Finely-diced Canned Tomatoes

☐ Whole Canned Tomatoes

☐ Grapeseed Oil or Spray

☐ 4 Vegetable and/or Beef Bouillons (organic)

☐ 2 tbsp of Fresh Garlic

☐ 1 tbsp of Dried Pasley

☐ 1 tbsp of Dried Basil

☐ 1 tbsp of Dried Oregano

☐ Black Pepper

Here are the recipe instructions:

  1. Tenderize your flank steak in a sealable freezer bag using a meat mallet. 
  2. Drizzle lemon juice or white vinegar over your steak and season with sea salt. Add Worcestershire Sauce.
  3. Peel white potatoes and add to a bowl of cold water.
  4. Dice carrots, celery, and onion.
  5. Peel sweet potatoes and turnip and cut them into 1/2-inch pieces.
  6. Remove white potatoes from water and cut them into slightly larger pieces (about 1 inch).
  7. Spray oil into a large Dutch oven or pot.
  8. Add carrots, celery, and onions, and sauté. 
  9. Mix 4 bouillon cubes with 2 cups of boiling water and add to pot. Add another 6- 8 cups of water. 
  10. Put the lid on and let simmer for 10 minutes
  11. Stir and add white potatoes to pot and bring to a boil.
  12. Add both cans of tomatoes to pot. Let simmer with lid on for 20 minutes. 
  13. Add sweet potatoes, turnip, garlic, black pepper and sea salt to taste. Let simmer with lid on for 20-30 minutes. 
  14. Add green beans, frozen peas, and frozen corn, and stir.
  15. In a hot skillet, cook flank steak for 1-2 minutes each side. 
  16. Cut steak into strips, following the grain, and then cut into bite-sized cubes.
  17. Add meat to soup. Add dried parsley, dried basil, and dried oregano. 
  18. If you prefer your meat rare, eat right away. If you like it cooked more, then let it simmer for longer.
