Spicy Chicken + Potato Soup

Ingredients

  • 4 cloves of garlic
  • 3 carrots
  • 3 celery ribs
  • 2 white onion
  • 4 large russet potatoes
    (or 8 small potatoes)
  • 1 zucchini
  • 1-2 cups of fresh spinach
  • 2-6 red hot chili peppers (to taste)
  • 1 cup of corn
  • 1 red bell pepper
  • 3 chicken breasts
  • 2 chicken bouillon cubes with 6-8
    cups of water
  • 1 tsp of Himalayan/sea salt + fresh
    cracked pepper
  • dollop of plain Greek yogurt

Directions
1. Wash potatoes and then place in a bowl filled with cold water and let soak for at least 15 minutes (30 is ideal). While soaking, dice carrots, celery, and onion and move to a bowl.
2. Cut chicken into bite-sized pieces. Spray a pan with one spray of grapeseed oil (or oil of choice), before adding chicken. Brown chicken on all sides, but don’t cook all the way through. Remove from heat.
*Remember to wash the cutting board and anything uncooked chicken has touched.
3. Spray one spray of grapeseed oil in a large pan or Dutch oven. Sauté carrots, celery, and onions for 5-10 minutes over medium heat until fragrant and onions are translucent.
4. In the meantime, dice red hot chili peppers. We kept the seeds, but if you’d like to remove them, feel free. Remember to wash your hands thoroughly. Seed and dice red bell pepper.
5. Boil 6 cups of water in a kettle. Mix hot water with chicken bouillon cubes. Pour into a large stock pot or Dutch oven and place on stove top on medium heat.
6. Remove potatoes from the water and slice them into bite-sized pieces. Add potatoes to a large pot and bring to a boil. Turn the heat down to a low simmer. Let simmer until potatoes have softened (20-30 minutes).
7. Add chicken, zucchini, and chickpeas to the soup mixture and stir. Add salt and pepper and let simmer for another 10-15 minutes. Once cooked, add fresh spinach and frozen corn and let simmer for a few more minutes.
8. Serve with a dollop of plain Greek yogurt and salt and pepper.
9. Enjoy!
